As we grade each year's harvest, we settle for only the best. This caviar captures the eggs at their absolute peak of size, flavor, color and texture, when the sturgeon are at their most mature. A hybrid caviar from Kaluga Sturgeon (Huso dauricus) and Amur Sturgeon (Aciepenser schrenkii). This caviar has very firm, large individual beads and a mellow, rich buttery taste.
